Red Quinoa

Just like regular quinoa, red quinoa is a protein-rich grain that healthy people like to call a “superfood.” It’s also yummy and pretty, and easy to make. Three good reasons to try it out.
Try using quinoa instead of rice, couscous or pasta; it’s fast!
General cooking directions:
Boil two cups of water with a pinch of salt.
Add one cup red quinoa.
Let boil, covered, for 15 minutes.
Open and stir. You can tell if it’s done if the grain is slightly transparent and has little white stringy things. 
Top the grain with some grilled veggies, tofu, salmon, or anything else you think might make a nice color combo.
