Remember those citrus fruits I was talking about? Here’s a great way to use some of them.
Marinate one and half pounds of peeled cooked shrimp in a mix of:
1 cup orange juice (NOT made from concentrate)
1/2 cup lime juice
1/2 cup lemon juice
6 oz can of tomato paste (no salt added)
2 shots of vodka (woo hoo!)
3 tablespoons of olive oil
1 teaspoon cayenne pepper
1 and a half cups chopped red onion
1 cup chopped cilantro
1 half cup of fresh orange/mandarin flesh (cara cara, blood, naval or tangelo work well!) To get the flesh out, peel normally, then remove the thin white lining. Or you can cut like a grapefruit and spoon out. 
* mix the tomato paste, olive oil, and cayenne together first. Then add each of the other ingredients one by one, shrimp last. Let marinate at least 1 hour in the fridge. You can do this WAY in advance!
