Zucchini Salad with Fava Beans and Mint
A quick and easy way to work fava beans into your spring diet:
1. Roughly chop 1 zucchini, add to a pan with 1 tablespoon heated olive oil.
2. Add 2 tablespoons chopped red onion and 1/8 teaspoon salt.
3. Add 1/4 cup cooked fava beans
 - to cook raw fava beans: remove beans from the fuzzy pods, place in a pot of salty boiling water and cook for 6-8 minutes or until soft.
4. Let beans cook in the pan with other ingredients for 1 minute, then transfer to a bowl.
5. Add 1 tablespoon chopped mint and 1 teaspoon of fresh lemon juice.
Serve and enjoy!
