Tomatillo!
This little beauty, a close cousin of the tomato, is best known for it’s use in salsa verde and other mexican dishes. Also known as a “husk tomato”, this cutie grows inside a husk which dries out as the fruit matures, revealing the bright fruit. The tomatillo inside can be green (most usual), yellow, red, or even purple! Its tart flavor is great in a quick salsa, but we’re excited about all kinds of other possibilities. Any ideas?
