Seared scallop with brussels sprouts and whipped blue potatoes!

The brussels sprouts are a cinch: wash, cut in half, toss in olive oil and sea salt. wrap in aluminum foil (make a pouch), toss in the oven at 400F for 30-40 minutes. 
The scallops are just as easy! Wash your scallops at pat them dry. Dust lightly with some salt and white pepper.
Coat a pan with olive oil— just enough to give you light coverage of the pan. I might say 2 tablespoons MAX. Heat the pan until it is HOT. Place scallops in the pan (it should crackle). Cook until browned and crispy on one side, then flip and do the same for the other side. Serve immediately!
